Wow has this been a crazy summer and I haven’t brewed since the April. My wife was hospitalized but is doing better now. Well I decided to do an Octoberfest in October. I purchased the kit from Beer and Wine hobby and had them mill them. The night before I gathered my RO water and added in the required salts.

Next morning I woke up and started the Anvil at 148F(64C) and went food shopping. When I returned the water was at temperature and ready to mash in, which I did and started the pump. With 30 minutes left in the mash I did my typical stop pump and give the grain bed a good stir to make sure we get as much as we can out of those grains. With about 9 minutes left in the mash I turned the Anvil up to 168F(75.5C) to mash out. Pulled the basket when it hit 168F(75.5C) and let drain while I cleaned up a few things. After it stopped dripping I gave the bag a squeeze and pulled the basket and let it drain at an angle. Pulled a gravity sample of 1.029SG I tossed 20 packs of sugar(3.53Gper) into the wort to help bump the gravity a bit. This is why I will mill my own grains. I mill them a lot finer and get a better mash efficiency out of it but oh well the sugar will help. Ended with a pre-boil if 1.033SG. Better but not great just don’t want to load it up with too much sugar.

@09:11 I started the boil and added in the first addition of hops. With 45 minutes left I added in the next addition, You may see the hop basket but I’m not using it here just to hold my spoon. Since not a lot of hops I tend to let them move freely around the wort. Added in Irish moss and yeast nutrients with 10 minutes left in the boil. With 5 minutes left added in the last of the hops and let the boil finish out. Took a wort sample of 1.040 and let the wort chill down @10:41. @10:55 was down to 92F(33C). Pitched yeast when it got down to 75F(24C) and let it cool down the rest of the way. I’m going to let this go without temperature control and leave it in the basement with the windows open, Very cool outside.

On Oct 18th at 05:45 I decided it was time to keg up this batch. Fermentation went very quick because of the warmer temperatures but I did let it sit out for a while before kegging it up but that was more of lack of time. Pulled a gravity reading of 1.006SG which gives me about a 4.46% beer which is okay with me. It has a nice taste and can’t wait for it to be cold and carbonated, soon enough. Cleaned up and placed my keg in my condition refrigerator on CO2.
