I’m still not sure if this should be called a California common as I ended up fermenting this at 52 degrees F because I really wanted something clean. I noticed signs of fermentation after a little more than a day after brewing. Kicked off quick and after a few days at 52 F I raised the temp to 68 and let it slow climb. It finished off after a few more days and took a gravity reading of 1.004, 4.86%. Very happy about that as I’m trying to make lower ABV beers. After taking the reading put in the ferm chamber and set the set point to 48 F. After the night it was down to the 48 F and kicked the set point down to 38 F.
After the cold crash, transferred to the keg and put on CO2 to carbonate up. I also collected a few jars of yeast to use later on.
