Wow its been a crazy winter and a long story but I’m glad to get back brewing and what better way to kick off a brew session with a 90 minute boil and one of my favorite beers, My Oktoberfest. Well as I normally do I pulled the water the day before and got my grains all weighted out and milled. Added in the salts and setup the Anvil to 152F(66.6C) and to start at 05:00 so when I wake up and ready to brew the water will be at temperature.







@06:14 the water was at 140F(60C) and didn’t want to wait any longer to added in the grains and started the pump. @06:22 finally hit the 152F(66.6C). @06:44 I stopped the pump and gave the grain bed a good stir and put the pump back on. With 10 minutes left in the mash I turned the Anvil up to 168F(75.5C) and 100% power to mash out. Plus helps me get to the boil temperature quicker. @7:21 hit the 168F(75.5C) and let sit there for a few minutes before pulling the grain basket and turning the Anvil up to 100% and 212F(100C). While awaiting the boil I pulled a gravity sample of 1.040SG and cleaned up what I could. @8:10 hit a boil.







@ the start of the boil there wasn’t much to do as there is a 90 minute boil and the first addition isn’t until 60 minutes left. At the 60 minute left mark I added in hop addition and with about 15 minutes left in the boil I added in the wort chiller. with 10 minutes left add in the rest of the hops and with 5 minutes left added in the yeast nutrient and Irish Moss. At the end of the boil took a gravity of 1.046SG. and started to chill the work. @09:46 the wort was down to 123F(50.5C).@09:56 was down to 76F(24.4) and I transferred over to the fermentor. Pitched the yeast and placed in my keezer set to 54F(12.2C) All cleaned up by 10:16









@07:15 on March 9th after a week of slowly dropping the temperature of the beer to cold crash it down to 40F(4.44C) and got a gravity reading of 1.009 SG giving me about 4.86% beer which is right where I like it. Transferred over to a keg to carbonate up. Cleaned up equipment and wait a few weeks to test 8) Took a very small sample, and was pretty tasty.
