After brewing this Oktoberfest fermentation went very well. After realizing the issue I was having with the Cold crash Guardians, I noticed within 12 hours activity in the jar with sanitizer. After a day of activity I push the temp up a little bit from 58 degrees F to 60 degrees F, let the run out for a few days of really good activity I pushed it temp up to 65 for a few days then 68 degrees. All airlock activity stopped after a day of hitting 68 degrees. Took a gravity reading of 1.009, coming in at 5.12% Perfect, slight Krausen on top but that will drop out during the cold crash. Added back to the fermentation chamber and let rest for a few hours before turning the chamber down to 45 degrees. I like to step it down to about 38 degrees so I don’t freeze anything. After a few days at 38 time to keg up and collect a few jars of the trub.
After the cold crash. I had hooked up some C02 to the vessel and with about 1-2psi pushed the beer out of the fermentor into my keg. Kegged up 5 gallons and collected a few jars of yeast slurry for later use. I took the picture but if you see below of the keg you can make out the line of where the beer is at in the keg from the condensation.
