UPDATE: Unter Druck German Pilsner Brew day 5-6-23

The chiller quickly pulled down the wort to the 50F(10C) within a few hours so I was happy about that. Fermentation kicked off rather slowly but kicked off in less then 24 hours. After a few days fermentation started to slow down from where it was so I let the beer free rise till I hit 65F(18C) and held it there for a few days and plus I was going away to camp for an extended weekend. At some point over my long vacation my chiller had cut out and the beer was up to 72F(22C) when I got back. I’m not too concerned as fermentation was complete and that just help clean up anything left over. Took a reading on day 9 and came up with 1.004SG which translate to about a 5.51% ABV beer. A little higher then I wanted but still ok. Now its time to check the capacity on bring down this beer to 38F(3C) to cold crash it and get it ready to transfer to a keg to carbonate.
