Fermentation kicked off hard, the next morning had great activity and waited another day and pitched the hops while under full fermentation. I’m hoping to keep the O2 out of the beer and also hoped to see if I can pick up on those hazy qualities. After a week in the fermentor I pulled a gravity sample of 1.010 SF. The hops from the dry hops were floating on the top looked pretty cool, a little unhappy I didn’t take any pictures. Placed the fermentor into the keezer and set the temperature to 48 F to get the initial pull down.
After a days, Set the temperature down to 38 F. Left for another day and than transferred into a keg. Since the beer was already down to temperature, I decided to add 15 psi to the keg and started to rock it back and forth to quickly add CO2 to the beer as I want it ready for xmas.
