Check out the brew day here. That day,Id say about 8 hours after pitching I started to see bubbling in the blow off tube. The next morning less then 24 hours, fermentation was kicked off and sitting at 58F(13.3C), I opened the valve to fill the bag with CO2 and it filled quickly. Checked the specific gravity and was already down to 1.039SG.
Once it hit 1.020 I started to turn up the temperature and let it rise to 65F(18C). The beer finished out at 1.007 SG. After at 1.007 for a few days I started to crank the fermentation chamber down a few degrees at a time and let it rest at 38F(3C). I had it at 38F(3C) for a week before transferring over to the keg to be carbonated.
Transferred over to my keg via my normal no/low O2 transfer system. Took a small sample, Tasty, and has a dry finish. Should be good carbonated. We will see.
