One thing I like about this beer, its quick and easy to brew. Since you want the yeast character in it why cold crash it. After a little over a week I pulled a gravity sample of 1.008 which gives me an ABV of 4.59% which is much better then the 1% higher it was. After taking the sample I CO2 pushed the beer into a clean and CO2 purged keg and place in the refrigerator to carbonate up. This should be ready to drink in 2 weeks since I’m a let it sit and rest while carbonating. The sample tasted great and can’t want to have this with an orange.
